FOG compliance, from the hauler's side

In most cities, from Houston to Charlotte, the grease trap rules put the record keeping on the restaurant. But the restaurant can't keep those records without the hauler's paperwork: when the trap was pumped, how many gallons came out, who hauled it and where it went. The hauler who hands over clean records is the hauler who keeps the account.

That's the job Outfall does. It isn't the city's FOG program software. It's the hauler's side of the paper trail, done right at the truck.

Every trap on a schedule

Each restaurant is a customer with sites and tanks, so a strip mall with three interceptors stays three separate tanks with their own history. Due dates follow the intervals in your rules, and the due soon list shows which traps are coming up so none go overdue.

City presets set those intervals for you:

  • Houston, Dallas, Austin, San Antonio, Fort Worth, El Paso (TX)At least every 90 days
  • Phoenix (AZ)Outdoor every 90 days, under-sink every 30
  • Jacksonville (FL)Outdoor every 90 days, under-sink every 15
  • Nashville (TN)Outdoor every 90 days, under-sink every 30
  • Boston (MA) and Washington, DCOutdoor every 90 days, under-sink every 30
  • Charlotte (NC)Outside traps quarterly, under-sink traps monthly
  • Greensboro, High Point, Winston-Salem, Durham, Cary (NC)Each city's own interval or records rule

Presets are researched from public city sources, last verified October 22, 2026, and can change. Confirm the rules with each city. Outfall is not approved or endorsed by any city. City missing or rule looks off? Tell us in the app and we'll fix it or build custom rules for you.

Grease trap service records, ready to hand over

Run the grease trap service records report for any site and date range, then share it as a PDF or CSV. Each pump-out lists:

  • Business and service address
  • Date and time of service
  • Gallons removed
  • Hauler, hauler permit, truck and driver
  • Disposal site and the manifest number

Some cities (Charlotte, Greensboro and High Point among them) take grease records through an online portal. Outfall doesn't connect to those portals today. You or the restaurant upload the report the city asks for.

No blank boxes

Pick what your rules require: gallons, tank condition, photos, the customer's signature, the disposal site, the date discharged, or every checklist item. A job can't be completed until those are filled in, so the record is complete before the truck pulls away.

Photos of the trap are attached to the job, which makes "were you even here?" a short conversation.

Grease manifests and the state log

Many states treat grease trap waste like septage, so grease haulers need the same state permit and log. Florida's septage permit covers grease interceptors, for example, and Texas wants a trip ticket for each grease load. In Outfall, your state preset pulls grease pump-outs into your state pumping log and annual renewal summary. Every job also builds a manifest marked as grease trap waste. See the manifest app for what goes on it.

City not on the list?

Write custom rules for your city or county: the fields you must record and how often traps are due. Or tell us in the app which city you need, and we'll build the rules for you.

Grease questions, skimmed off the top.

Is Outfall a grease trap log for restaurants?

No. It's for the haulers who pump the traps. The records it produces are what restaurants need to keep their own grease trap logs complete.

Can I use it for septic too?

Yes. The same app and the same price cover septic pumping, grease traps and holding tanks.

Does it upload to my city's FOG portal?

Not today. Export the PDF or CSV and upload it, or hand it to the restaurant.

Which cities have presets?

Houston, Dallas, Austin, San Antonio, Fort Worth, El Paso, Phoenix, Jacksonville, Nashville, Boston, Washington DC, Charlotte, Greensboro, High Point, Winston-Salem, Durham and Cary. Anywhere else, use custom rules or ask us to build them.
